Menemen (Turkish Eggs with Peppers and Tomatoes)
Turkish · Breakfast · 30 min · 2 servings
Ingredients
- 200 g eggs
- 110 g onion
- 150 g green peppers
- 400 g tomatoes
- 27 g olive oil
- 2 g sweet paprika
- 8 g parsley
- 3 g salt
- 1 g black pepper
Instructions
- Finely chop the onion; seed the green peppers and slice them into thin rings. Peel the tomatoes and cut them into small dice.
- Heat the olive oil in a frying pan and soften the onion and peppers over medium heat for 5-6 minutes.
- Add the tomatoes, sweet paprika, salt and black pepper and cook for 8-10 minutes until the tomatoes collapse and the sauce thickens slightly.
- Crack the eggs into the pan and, as the whites start to set, fold them gently into the sauce a few times with a spoon; the eggs should stay soft and loose.
- Take off the heat at once, scatter with chopped parsley and serve hot from the pan.
