Beef Pho
Vietnamese · Soup · 210 min · 6 servings
Ingredients
- 1.5 kg beef bones
- 400 g thinly sliced beef
- 400 g rice noodles
- 2 onions
- A piece of ginger
- 4 star anise
- 1 cinnamon stick
- 4 cloves
- 3 tbsp fish sauce
- Thai basil, coriander, lime, bean sprouts
Instructions
- Boil the bones for 10 minutes, throw that water away and rinse them well — this step is the whole secret of a clear broth.
- Char the unpeeled onion and ginger over a flame or under a grill until blackened.
- Toast the spices in a dry pan until fragrant.
- Simmer everything in fresh water for 3 hours, never letting it boil.
- Strain and season with fish sauce.
- Cook the noodles, put them in bowls and lay the raw sliced beef on top.
- Pour the boiling broth over — that heat is what cooks the beef.
- Finish at the table with herbs, lime and sprouts.
