Baked Turkish Rice Pudding (Fırın Sütlaç)
Turkish · Dessert · 70 min · 6 servings
Ingredients
- 100 g rice
- 250 ml water
- 1000 ml milk
- 150 g sugar
- 25 g rice flour
- 2 g cinnamon
Instructions
- Rinse and drain the rice, then cook it gently with the water for 12-15 minutes, until it has absorbed the water and is soft.
- Set aside one glass of the milk; pour the rest over the rice, bring to a boil, stirring now and then, and simmer for 10 minutes.
- Whisk the rice flour into the reserved cold milk until smooth and pour it slowly into the pot, stirring all the time.
- Add the sugar and keep stirring for about 10 minutes, scraping the bottom, until it thickens to a pudding consistency.
- Heat the oven to 220°C with the top grill on. Divide the pudding among ovenproof bowls and set them in a tray holding 2 cm of cold water.
- Bake on the top shelf for 15-20 minutes until the surfaces are speckled brown. Cool to room temperature, chill for at least 3 hours and dust with the cinnamon to serve.
