Quick Garlic Chicken and Vegetable Stir‑Fry

Ingredients
- 1 lb (450 g) boneless skinless chicken breasts, thinly sliced
- 2 tbsp cornstarch
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tsp sugar
- 2 tbsp vegetable oil
- 3 garlic cloves, minced
- 1 tsp fresh ginger, grated
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 medium carrot, thinly sliced
- 3 green onions, cut into 2‑inch pieces
- 1/4 cup chicken broth or water
- 1 tsp toasted sesame seeds (optional)
Instructions
- In a bowl, toss the chicken strips with cornstarch until lightly coated; set aside.
- Mix soy sauce, oyster sauce, rice vinegar, sesame oil, and sugar in a small cup; this is the stir‑fry sauce.
- Heat 1 tbsp vegetable oil in a large wok or skillet over medium‑high heat. Add the chicken and stir‑fry 3‑4 minutes until just cooked through and lightly browned. Transfer chicken to a plate.
- Add the remaining 1 tbsp oil to the wok. Add garlic and ginger; sauté 30 seconds until fragrant.
- Add broccoli, bell pepper, and carrot; stir‑fry 4‑5 minutes until vegetables are crisp‑tender.
- Return the chicken to the wok, pour in the prepared sauce and chicken broth, and toss everything together. Cook 2‑3 minutes, allowing the sauce to thicken and coat the ingredients.
- Remove from heat, drizzle with a little more sesame oil if desired, and garnish with green onions and toasted sesame seeds. Serve immediately over steamed rice or noodles.
