- 6 g garlic
- 60 ml ice-cold water
- 1 g cumin
- 4 g salt
- 27 g olive oil
- 1 g paprika

Instructions
- Drain the cooked chickpeas; for an extra-smooth hummus, slip off their skins between your fingers.
- Blend the tahini and lemon juice in a food processor for a minute until thick and pale.
- Add the garlic, cumin and salt and blend, then add the chickpeas and process for 2-3 minutes.
- With the motor running, add the ice-cold water a little at a time and blend for 2 minutes more until silky and light. Adjust the salt and lemon.
- Swirl the hummus onto a shallow plate with the back of a spoon, drizzle with the olive oil and finish with the paprika and chopped parsley.
