Banana Bread
American · Baking · 75 min · 10 servings
Ingredients
- 113 g butter
- 150 g sugar
- 100 g eggs
- 350 g ripe bananas
- 80 ml buttermilk
- 4 g vanilla extract
- 250 g flour
- 5 g baking soda
- 2 g salt
Instructions
- Heat the oven to 175°C and grease and line a 23x13 cm loaf tin. Melt the butter and let it cool slightly.
- Mash the ripe bananas in a bowl with a fork.
- Whisk the melted butter with the sugar; beat in the eggs, buttermilk and vanilla extract, then stir in the mashed banana.
- In another bowl combine the flour, baking soda and salt. Add to the wet mixture and fold with a spatula just until no flour is visible; do not overmix.
- Pour into the tin and level the top. Bake for 55-60 minutes until a skewer inserted in the middle comes out clean, covering with foil if it browns too early.
- Leave in the tin for 10 minutes, then turn out onto a wire rack and cool completely before slicing.
