Çılbır (Turkish Poached Eggs with Garlic Yogurt)
Turkish · Breakfast · 15 min · 2 servings
Ingredients
- 200 g eggs
- 240 g yogurt
- 4 g garlic
- 15 g vinegar
- 1000 ml water
- 28 g butter
- 3 g paprika
- 2 g salt
Instructions
- Grate the garlic and stir it into the yogurt with a pinch of the salt; leave it on the counter to lose its chill.
- Bring the water to a boil in a wide pot, lower it to a gentle simmer and add the vinegar.
- Crack each egg into a small cup first. Swirl the water gently and slide the eggs in one by one; poach for 3-4 minutes until the whites are set and the yolks still runny.
- Meanwhile melt the butter in a small pan until foaming, take it off the heat and stir in the paprika.
- Spread the garlic yogurt over two plates. Lift the eggs out with a slotted spoon, drain well and set them on the yogurt; sprinkle with the rest of the salt, spoon over the paprika butter and serve immediately.
